Black Bean Burgers with Potato Wedges

Had my good friend Joe over this weekend so I thought I’d break out some seriously tasty food. These are actually pretty easy to make but they are seriously good, especially if you like making food that gives you really messy hands in the process.

Potato Wedges

Ingredients: potatoes, paprika, chilli powder, salt, olive oil.

Preheat the oven to 220°C. Slice your potatoes and coat with olive oil, paprika, chilli powder and a little salt. Roast for about 40-45 minutes, turning once or twice and re-coating with any oil or spices that have run off.

Black Bean Burgers

Ingredients: 1 can black beans, an onion, sweetcorn, bread crumbs (I just broke up one of the buns we were using for the burgers), quite a bit of flour, a little water, 1tsp salt, 1tsp pepper, 1tsp paprika, 1tsp chilli powder, 1tsp cumin, 1tsp garlic powder.

Mash up the black beans, then add the onion (finely chopped, sweetcorn, bread crumbs and spices and mix. Begin adding flour and just a splash of water, mixing all the time. Keep adding the flour until the mixture is thick and sticks together nicely. Form into burgers and fry in oil for about 5 minutes each side, or until they’re a dark and crispy brown.
